Hi Dora, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
My journey began in 2017, in the small kitchen of my home. I wanted my daughters to experience the authentic flavor of Mexican pan dulce—the kind I grew up with, especially from Oaxaca. When I couldn’t find that taste locally, I decided to create it myself. I spent countless hours learning, watching videos, reading, and practicing every day. The early batches were far from perfect, but each mistake pushed me to improve.
After more than a year of dedication, I perfected my concha recipe and began sharing it with friends and family. What started as a simple passion quickly grew into something bigger. I began selling at farmers markets in Nashville, where the community embraced my bread and my story. That’s when Panecito KaLe was born—named with love after my daughters, who inspired everything from the beginning.
Today, Panecito KaLe is more than a bakery. It’s a reflection of heritage, family, and the joy of sharing Mexican culture through food. What started as a dream in my kitchen has grown into a brand rooted in tradition, creativity, and love—one concha at a time.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The road has definitely had its challenges. At first, my conchas didn’t turn out well, and I had to practice every single day to get them right. There were moments of doubt and frustration, but those struggles taught me patience, resilience, and the importance of staying true to my vision. Building Panecito KaLe has been a journey of persistence, learning from mistakes, and celebrating small victories along the way. Every challenge has made the sweet moments even more meaningful.

Panecito KaLe is a small, family-owned bakery that brings the magic and sweetness of Mexican pan dulce to Nashville. We specialize in conchas—traditional Mexican sweet breads—with flavors inspired by my Oaxacan roots and my childhood memories. Each concha is handmade with love, care, and attention to detail, creating an authentic taste and experience that stands out from other bakeries.

I’ve always been a dreamer with a strong sense of imagination, but also persistent—if I wanted something, I would practice, experiment, and work hard until I got it right. That curiosity, patience, and love for sharing what I create are qualities that have stayed with me and shaped Panecito KaLe.
