Hi Danielle/Lekendris, so excited to have you with us today. What can you tell us about your story?
Lekendris has always been a backyard cook who finds peace and joy in making people smile through food. I myself have been an entrepreneur since I was 18, building ventures with grit and heart. Over 14 years, I watched the demand for Lekendris’s cooking grow—from holiday meals to birthday celebrations—and realized there was a genuine opportunity to turn this passion into a career.
In 2019, God placed a clear vision in our hearts, and we chose to trust Him every step of the way. We connected with our pastor, Courtney Franklin, whose prayers propelled us forward. Grill Grabz launched on November 19, 2021, and in our first year, we became the top mobile restaurant in Memphis Burger Week, ranking #1 out of ten—even alongside major corporate dine-in spots. Today, Grill Grabz is known for the best burger on this side of town, with our signature Salmon Philly as a standout on the menu. God has been faithful, guiding us through challenges and helping us overcome them all.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
In our food truck business, we’ve faced several challenges that required us to adapt and learn quickly. We’ve had to navigate the realities of operating a mobile restaurant, from securing permits and managing schedules to maintaining equipment on the road and delivering consistent quality to customers.
During our first year, despite a strong kickoff, we experienced a serious setback when a vehicle collided with our parked unit. The incident was emotionally challenging, but it reinforced the importance of safety, contingency planning, and team resilience. Since then, we’ve focused on enhancing safety protocols, communication, and operational efficiency to prevent similar issues.
