Meet Jeremy “Chef Cam” Fanion

Today we’d like to introduce you to Jeremy “Chef Cam” Fanion.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Prior to the pandemic, I was working for public relations company. As the company started to feel the pressures of the pandemic, I was laid off from my job. At that point, I had to figure out a plan to become an entrepreneur.

I wanted to explore some of my other hobbies and cooking was one of them. I decided that I was going to devote the next two years to starting my culinary career. I started to develop Chef Cam G Catering Services.

Under this name, I offer meal prep services and host small-scale events with friends and associates to create buzz around my name. In 2021, I began working as a cook at WKND Hang Suite.

Through this opportunity, I connected with Chef Phillip Dewayne. Now, I work as a cook at Park +Cherry and alongside the catering team under Chef Phil. Through these directions, I am slowly developing my own chefhood and growing as an entrepreneur.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Like all adventures, there were many obstacles that occurred along the way. One of the most significant was finding confidence in my craft. I am a person that strives for perfection.

I had to learn to be okay with making many mistakes. There was a lot of trial and error, but I learned to use the mistakes to my advantage. Ultimately, this has helped me to become better at my craft,

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I currently working for Chef Phillip Dewayne at Park & Cherry as a line cook and member of his catering team inside the Dixon Art Gallery & Garden. I specialize in Modern American Food with an International flare.

Some people like to say I’m known for my outtake on the Food & Nightlife culture. As culinary eats further begins to become a major play in nightlife culture, I enjoy cooking for the people who love a good meal late at night.

One of my proudest moments would be the cultivation of the “Midnight Menu” Series. This series was developed in the fall of 2020, and it is a series of events meant to bring more exposure to my specialized dishes. The “Midnight Menu” Series is held semi-annually and has become an early staple in my career.

I feel like one of my best qualities as a young Chef is my ability to sell and talk about the food that I make.
